About the Experience
Few elements shape whisky more profoundly than the cask. This workshop explores maturation as an active force — not a passive stage of aging.
A barrel carries memory: of the wood itself, of the wine it once held, and of the way it was seasoned and aged. Sherry-seasoned casks contribute far more than sweetness — they introduce oxidative depth, dried fruit concentration, nutty complexity, tannin structure, and textural weight.
Rather than simplifying sherry influence to “finish,” this session examines how prior cask contents interact with spirit over time — reshaping aroma, structure, and mouthfeel.
By tasting selected sherries alongside sherry-matured whiskies, participants experience how biological and oxidative aging influence cask character — and how that character transforms the whisky within.
This is a study in maturation as transformation — where identity is not added, but redefined.

Participants explore how different sherry styles (such as Oloroso or Pedro Ximénez) season casks differently — and how that distinction translates into structure, sweetness, spice, and depth in the whisky.

Workshop Flow & Guided Tasting Format
This workshop is typically delivered as a four-whisky exploration with two to three sherry selections over approximately 2.5 hours.
Format Options*
Hosts may choose between a Scotch-focused format or a comparative format including one American sherry-finished expression.
Option 1 (Scotch Focus) — Four Sherry-Matured Scotch Single Malts: A focused exploration of Scotch whisky shaped by different sherry cask types.
Option 2 (Comparative) — Three Sherry-Matured Scotch Single Malts + One Sherry-Finished American Whiskey: A comparative format highlighting how American and Scottish production philosophies interpret sherry influence differently.
The depth of technical content — including cask seasoning, production history, and maturation philosophy — can be adjusted depending on audience experience.
Final bottle and sherry selection are confirmed in consultation with the host prior to the event.

This workshop emphasizes tasting and education rather than consumption. Participants are encouraged to engage mindfully and at their own pace.
Alcoholic beverages (including whisky and/or professionally recommended sherry selections) are not included in the session fee and are provided by the host unless otherwise agreed in advance. TasteIST does not sell or supply alcohol.
Sherry selections are professionally recommended according to the chosen workshop format and are intended solely for comparative educational tasting.
Food is not included unless arranged separately. For private venues, appropriate glassware and a suitable tasting environment are recommended.
Please inform the host in advance of any allergies, dietary restrictions, accessibility considerations, or special requirements.

This workshop explores how prior cask contents influence whisky maturation and flavor development. No wine or sherry service is included as part of the standard session. Any additional wine or fortified wine service must be separately arranged and supplied by the host in compliance with applicable local laws and agreed upon in advance with the TasteIST trainer.
